Learn How to Clean Your Cast Iron Skillet

Understanding Cast Iron: Materials and Why Proper Care Matters

Cast iron cookware has been used in kitchens for over 2,000 years, with modern cast iron skillets becoming popular in America during the 1800s. Unlike stainless steel or non-stick pans, cast iron is made from iron ore that's melted and poured into molds, creating a heavy, durable cooking surface. The material itself is porous, which means it has tiny holes and crevices throughout its surface that you cannot see with the naked eye.

This porous nature is both a strength and a reason why cast iron requires different care than other cookware. Over time and with regular use, oil and fat bond to these microscopic surfaces, creating what cooks call "seasoning." Seasoning is essentially a thin layer of polymerized fat that builds up and creates a natural non-stick surface. Cast iron that has been seasoned for decades can rival modern non-stick pans in performance, but only if it's maintained correctly.

Cast iron's weight and heat retention properties make it valuable for cooking. A 10-inch cast iron skillet weighs between 3 and 5 pounds, which allows it to distribute heat evenly across its surface. This even heat distribution means hot spots are less likely, resulting in more uniform cooking of foods like pancakes, steaks, and cornbread. The material also heats up slowly but retains that heat for extended periods, which is why cast iron is often preferred for searing meat or frying foods.

Understanding the structure and properties of cast iron helps explain why certain cleaning methods work while others damage the cookware. Methods that strip away the protective seasoning layer or expose the bare iron to moisture can lead to rust, the primary enemy of cast iron. Rust appears as rough, reddish-brown spots or patches on the cooking surface, and while it can be removed, prevention is far simpler than restoration.

Practical takeaway: Cast iron requires specific care because its porous surface develops a seasoning layer that improves over time. Unlike dishwasher-safe cookware, cast iron needs gentle handling to preserve this protective layer and prevent rust formation.

Immediate Post-Cooking Cleaning: The Right Way to Wash Your Skillet

The moment a meal is finished, the right cleaning approach begins. Most cast iron care experts recommend cleaning the skillet while it is still warm or at room temperature, not ice cold. When a skillet is warm, any stuck-on food loosens more easily, and the cleaning process is faster.

Start by rinsing the skillet under warm running water. Use a sponge, soft cloth, or brush to gently scrub the cooking surface, using circular motions that follow the grain of the iron when visible. If food has stuck stubbornly to the surface, pour a small amount of water into the warm skillet and use a wooden or plastic spatula to scrape away the debris. This method, called deglazing, is highly effective and does not damage the seasoning.

Many cast iron owners ask whether soap is acceptable. For decades, people were told never to use soap on cast iron because soap would strip the seasoning. This advice came from an era when soap was made with harsh lye that actually could damage seasoning. Modern dish soap formulas are much gentler. According to the American Culinary Federation and cast iron manufacturers like Lodge, using a small amount of mild dish soap is now considered acceptable. The soap will not harm well-established seasoning, though excessive soap on a newly seasoned skillet (less than a few months old) should be avoided.

After washing, dry the skillet completely with a clean cloth or paper towel. This step is critical. Any moisture left on the surface can begin the rusting process, particularly in humid environments. Some people prefer to place a damp skillet on the stovetop over low heat for a minute or two to evaporate any remaining moisture. This method works, but careful attention is needed to avoid leaving it unattended, as the handle can become hot.

Practical takeaway: Wash cast iron while warm using mild soap and warm water, scrub gently with a soft sponge or brush, and dry completely with a cloth immediately after washing. This routine prevents rust and maintains the existing seasoning layer.

Dealing with Stuck-On Food and Heavy Buildup

Cast iron skillets frequently end up with food that has burned or stuck to the surface during cooking. Stubborn food deposits can be frustrating, but several methods remove them without damaging the cookware. The approach depends on how much buildup exists and what type of food caused it.

For mild to moderate stuck-on food, the deglazing method works well. After the skillet has cooled slightly to a temperature where it can be safely touched, add about a quarter cup of water to the pan. Use a wooden spoon or spatula to scrape the stuck food gently. The water and the warmth of the skillet help loosen debris. Once the food lifts away, pour out the water and proceed with normal washing. This method takes advantage of the natural chemistry of cooking and requires no harsh scrubbing.

For heavier buildup, a paste made from baking soda and water offers an excellent option. Mix baking soda with just enough water to form a thick paste. Apply this paste directly to the problem areas and let it sit for five to ten minutes. Using a soft-bristled brush or non-abrasive sponge, scrub gently in circular motions. The mildly abrasive nature of baking soda helps dislodge stuck-on food without harming the seasoning underneath. Rinse thoroughly with water and dry completely.

Salt is another historical method that remains effective. While it sounds counterintuitive, coarse salt (like kosher salt) will not rust cast iron. Pour a small amount of coarse salt into the dry skillet and use a folded paper towel to scrub in circular motions. The salt acts as an abrasive and helps remove stuck food without the moisture of water. This method works particularly well for cast iron that is already seasoned and has a durable protective layer. After scrubbing with salt, wipe out the remaining salt with a clean cloth and then wash as normal.

What to avoid: Avoid steel wool, scouring pads, and abrasive cleaners, which can scratch and damage the seasoning layer. Never soak a cast iron skillet in water for extended periods or leave it wet. Do not use oven cleaner or harsh chemical cleaners, as these strip away seasoning and can leave residues that affect food taste.

Practical takeaway: Use deglazing with water, baking soda paste, or coarse salt to remove stuck-on food without damaging seasoning. These gentle methods are far more effective than harsh scrubbing and preserve the protective layer that makes cast iron valuable.

Seasoning: Building and Maintaining Your Skillet's Protective Layer

Seasoning is the foundation of cast iron care. It is a layer of polymerized fat that clings to the porous iron surface and creates a non-stick, rust-resistant coating. Unlike non-stick pans that have a coating applied during manufacturing, cast iron seasoning is built gradually through cooking and maintenance. Understanding this process helps clarify why certain actions strengthen seasoning while others weaken it.

Every time you cook with fat or oil in cast iron, you add a tiny bit to the seasoning layer. This is why cast iron used for frying or cooking fatty foods develops better seasoning than cast iron used primarily for boiling water or steaming vegetables. Over time, repeated cooking with fats builds multiple thin layers that become increasingly durable and effective.

If a skillet arrives new or if you've inherited one that has lost its seasoning through rust or poor care, the seasoning can be restored through oven seasoning. Preheat an oven to 450 to 500 degrees Fahrenheit. Clean the skillet thoroughly and dry it completely. Apply a very thin layer of neutral oil with a high smoke point, such as vegetable oil, canola oil, or grapeseed oil. Do not use olive oil or butter, which have lower smoke points and will burn. The layer should be so thin that the skillet appears almost dry; excessive oil will create a sticky, uneven finish rather than a protective layer.

Place the oiled skillet upside down on the middle oven rack (place a sheet of aluminum foil on the lower rack to catch any drips).
